La Plaza de España que es actualmente el centro neurálgico de la localidad fue en su tiempo el patio de armas del palacio condal. Se encuentra delimitada por los edificios de la Colegiata, el Palacio y el Pósito o Alfolí, edificio para el almacenaje de grano levantado entre los siglos XVII y XVIII, que conserva en su fachada elementos estilísticos del Barroco.
El origen de la villa de Olivares se remonta a la época romana, en la que, tras la conquista de la Bética a manos de un militar romano llamado Turculus, los terrenos que hoy ocupa el pueblo se convirtieron a lo largo del tiempo en un poblado denominado Estercolines o Estercolinas.
Edificado en la 2a mitad del s.XVI por D.Pedro de Guzmán, 1er. Conde de Olivares, fue enriquecido en el s.XVII por Don Gaspar de Guzmán y Pimentel, Conde Duque de Olivares. Residencia de los Condes de Olivares, también lo sería posteriormente de los abades y canónigos de la Colegiata. De estilo renacentista y composición simétrica, está flanqueado por dos arcos apuntados y coronados por almenas de grada con adornos en bajorrelieve. Tiene además cuatro torreones que avanzan ligeramente hacia la plaza con remates piramidales La puerta principal muestra sobre un jambeado, esbeltas semi columnas de mármol genovés, mientras que en la puerta central encontramos el escudo de la Casa de los Guzmanes, en mármol genovés, que representa a dos arpías sosteniendo el escudo, rematado por un dragón alado. Actualmente sede del Ayuntamiento, ofrece una exposición permanente de reproducciones artesanales de trajes de época barroca.
Al segundo conde de Olivares, Enrique de Guzmán y Ribera, se debe la fundación de la Capilla de Olivares. Don Enrique desempeñó entre los años 1582 y 1591 uno de los cargos más importantes de su tiempo, como fue la embajada española en Roma; trató con tres pontífices, Gregorio XIII, Sixto Vy Gregorio XIV siendo el primero de ellos el que aprobó la fundación de la Capilla de Olivares y el segundo le otorgó importantes bulas que concedieron a la misma notables privilegios.
El tercer conde de Olivares, Gaspar de Guzmán y Pimentel, que ha pasado a la historia de España por haber sido el valido del rey Felipe IV al heredar la Casa de Olivares, dejó clara su intención de elevar el rango de la capilla que había sido fundada por su padre, y así se propuso la erección de la iglesia en Colegiata, merced que obtuvo finalmente del papa Urbanc Vill mediante bula expedida el 1 de marzo de 1623, aunque dichas bulas no llegaron a España hasta 1625
